The Step-by-Step Process of Making Yellow Tea
黄茶是中国传统茶类,其工艺与绿茶相似,但因独特的「闷黄」工序,赋予其更柔和、少青草气的风味特征。
Yellow tea is a traditional Chinese tea that is similar to green tea, but with a special step called “sealing yellow”, which gives it a smoother, less grassy taste.
制作流程如下:

第一步:采青(茶叶采摘)
Step 1: Picking the Tea Leaves (Harvesting)
黄茶通常采用手工采摘,时间以早春为佳。在中国,多于4月清明节前后采收。
Yellow tea is typically hand-picked in early spring. In China, the harvest usually takes place around the Qingming Festival in April.
仅选取幼嫩芽头或一芽一至二叶的鲜叶。
Only the youngest, tenderest buds or one bud with one to two small leaves are selected.
采摘多在清晨进行以保持叶片新鲜度。
Picking is generally conducted early in the morning to maintain maximum freshness.




第二步:萎凋
Step 2: Withering
将鲜叶均匀摊放于阴凉通风处,降低叶片含水量。此步骤为后续杀青工艺做准备。
Fresh leaves are spread evenly in cool, shaded areas to reduce moisture content. This prepares the leaves for the heating process.


第三步:杀青(高温固色)
Step 3: Fixation (Heating the Leaves)
通过热锅轻炒方式快速加热叶片,终止氧化反应。此工序可锁住叶绿素与天然鲜香,保持翠绿色泽。
The leaves are gently heated (usually in a hot pan) to halt oxidation. This preserves the green color and fresh aroma of the leaves.
第四步:揉捻(塑形赋味)
Step 4: Rolling (Shaping the Leaves)
采用手工或机械方式轻揉茶叶。此步骤塑造外形、促进风味释放,并破坏叶片表面利于冲泡。
The tea leaves are gently rolled by hand or machine. This shapes the leaves, helps release flavor, and breaks the surface for better brewing.





第五步:闷黄(核心工艺)
Step 5: Sealing Yellow (the Special Step)
这是黄茶与绿茶的关键区别工序。揉捻后将茶叶置于密闭容器中,在温湿条件下静置24-36小时。轻微氧化使叶绿素降解,形成金黄色泽与醇厚口感。
This is the main difference between yellow tea and green tea. After rolling, leaves are placed in covered containers and kept warm and slightly moist for 24-36 hours. This allows slight oxidation, turning the leaves yellow while reducing bitterness.



第六步:筛分与分级(精制工序)
Step 6: Sorting and Grading (Optional Step)
剔除杂质碎叶,确保成品洁净度与规格统一。使用筛网按形态分级,去除茶末、茶梗等异物。
Impurities and broken leaves are removed to ensure cleanliness and uniform size/shape. Sieves separate leaves by size/shape, eliminating dust, stems, or unwanted particles.



成品特征/Final Product
外观:黄绿相间,叶质柔软微卷
Appearance: Yellow-green leaves, soft and slightly curled
口感:清甜醇和,无苦涩感
Taste: Light, slightly sweet with no bitterness
香气:馥郁花香,层次丰富
